INGREDIENTS: 4 onions, 6 cups of water or stock (I used a combination of chicken or beef or veggie), salt, pepper, white wine, and flour
DIRECTIONS: First slice onions thinly. Saute in a tablespoon of olive oil or bacon fat or butter. Sprinkle with salt and cook until caramelized, stirring occasionally, about an hour. When the onions are soft and deep brown, add a tablespoon of flour, stir and brown for a few minutes. Add a tablespoon of white wine. Then add stock or water and heat for another 15 minutes.
Serve with sliced baguette and gruyere cheese.
