Banana Bread

ADAPTED from Simply Recipes and I’m actually much happier with this recipe than Smitten Kitchen’s Jacked Up Banana Bread, which came out too spongy.

MAKES one loaf. We ate it warm while watching Game of Thrones.

NOTES: Feel free to play with the amount of nuts and chocolate. We were bound by a surplus of nuts and a dearth of chocolate. You can also substitute a portion of the sugar with brown sugar or increase it to one cup. Other fun add ins are a tablespoon of Kahlua or Baileys.

INGREDIENTS: 1 1/2 cups of flour, 1 teaspoon baking soda, 3 ripe bananas, 1/3 cup melted butter, 1, egg, 1 teaspoon of vanilla, 1/2 a teaspoon of cinnamon, 3/4 cup of sugar, 1 1/2 cup of nuts, 1/2 a cup of chocolate chips, a pinch of salt.

DIRECTIONS: Preheat oven to 350F. In a large mixing bowl, mash the bananas and mix with the butter. Add egg, vanilla, and sugar. Gradually add baking soda, salt, and flour. Stir until combined and finally add chopped nuts and chocolate. Bake for one hour or until a few moist crumbs cling to the cake tester (toothpick).
