Orange and Olive Oil Cake

ADAPTED from Smitten Kitchen’s Lime Yogurt Cake

MAKES 1 10-inch cake

NOTES: This is a super easy cake and therefore is rather unimpressive in appearance and flavor profile. But it makes for a good rainy day afternoon snack.

INGREDIENTS: 1 cup of yogurt, 3/4 cup of sugar, 1/3 cup of olive oil, 2 eggs, 1/4 cup of orange juice, zest from 1/2 a navel orange, 1 1/2 teaspoons of baking powder, 1/2 a teaspoon of baking soda, 1/4 teaspoon of salt, 1 2/3 cups of flour, and powdered sugar.

DIRECTIONS: Combine yogurt, sugar, olive oil, juice, and zest in a medium bowl. Whisk to combine. Incorporate eggs one at a time. Sift in flour, baking soda, baking powder, and salt. Bake at 350 for 30 minutes. Cool completely. Dust with powdered sugar.
