Chocolate Chip Banana Cake

Second time this week that I cooked food and didn’t take pictures. I don’t know what’s getting into me, but my friend actually paid me for this cake. Paid me! Now that’s a first.

Chocolate Chip Banana Cake

INGREDIENTS
1 3/4 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 large egg whites
1/3 cup sugar
1/3 cup dark brown sugar, firmly packed
2 tablespoons or 28.5 grams unsalted butter, melted
1 3/4 cups mashed bananas (about 3 large very ripe banana-mash)
2/3 cup chocolate chips

DIRECTIONS
Grease your bakeware of choice. Set a rack in the middle level of the oven and preheat to 350F/ 180C.

Stir together the flour, baking powder, baking soda, and cinnamon in a medium bowl.

In another medium mixing bowl, whisk the egg whites to break them up, then whisk in the sugar and the brown sugar. Whisk in the butter, followed by the mashed bananas.

Sift the flour mixture over the banana mixture and thoroughly fold it in. Add the chocolate chips. Scrape the batter into the prepared pan and smooth the top.

Bake the cake for about 45 to 55 minutes, or until a toothpick inserted in the center emerges clean.

Cool the cake in the pan on a rack for 10 minutes, then unmold it and cool completely on a rack.
